
Instructors with UAB’s EatRight Weight Management Program prepare healthy recipes every other Thursday on Fox 6's Good Day Alabama morning show. On January 6, 2004, she prepared Veggie Pasta Primavera.
3/4 1-lb pkg linguine or fettucine, uncooked (12 oz)
1 bag (10 oz) baby spinach leaves
1 medium red pepper, thinly sliced
1 medium green pepper, thinly sliced
1 (8 oz) pkg sliced sliced mushrooms
1 container (8 oz) Philadelphia garden Vegetable Light Cream
Cheese Spread
1/4 cup lowfat milk (add more if needed)
1/4 cup Kraft 100% grated Parmesan cheese
1 Tbsp olive oil
1/2 tsp kosher salt
- Cook pasta as directed on package. Remove pasta mixture from pan & drain.
- Cook vegetables in olive oil in large nonstick skillet over medium-high heat until tender. Set aside.
- Add cream cheese spread and milk to pan; cook and stir on low heat until cream cheese is completely melted and mixture is well blended.
- Return pasta mixture to pan. Sprinkle with the Parmesan cheese.
