Veggie Pasta Primavera

Instructors with UAB’s EatRight Weight Management Program prepare healthy recipes every other Thursday on Fox 6's Good Day Alabama morning show. On January 6, 2004, she prepared Veggie Pasta Primavera.

3/4 1-lb pkg linguine or fettucine, uncooked (12 oz)
1 bag (10 oz) baby spinach leaves
1 medium red pepper, thinly sliced
1 medium green pepper, thinly sliced
1 (8 oz) pkg sliced sliced mushrooms
1 container (8 oz) Philadelphia garden Vegetable Light Cream
Cheese Spread
1/4 cup lowfat milk (add more if needed)
1/4 cup Kraft 100% grated Parmesan cheese
1 Tbsp olive oil
1/2 tsp kosher salt


  1. Cook pasta as directed on package. Remove pasta mixture from pan & drain.
  2. Cook vegetables in olive oil in large nonstick skillet over medium-high heat until tender. Set aside.
  3. Add cream cheese spread and milk to pan; cook and stir on low heat until cream cheese is completely melted and mixture is well blended.
  4. Return pasta mixture to pan. Sprinkle with the Parmesan cheese.
